Corn and Carrot Salad

Ingredients
2 cups shredded/grated carrots
1 tbsp olive oil
1 tbsp lemon juice
2 tbsp mayonnaise
1 cup frozen corn, thawed and drained
3 tbsp fresh parsley
salt and pepper to taste

Optional:
1/2 cup golden raisins
2-3 tbsp chopped pimento
2-3 tbsp diced red onion

Directions:
Mix together lemon juice, mayonnaise, and oil until creamy. Set aside.
In a larger bowl, mix thawed corn, shredded carrots, parsley, and any of the optional ingredients you'd like. 
Toss vegetables with dressing, making sure to coat everything well. Season to taste with salt and pepper. Refrigerate until serving.
