Baked Mac and Cheese Recipe

 Everyone loves a decadent and delicious mac and cheese, but for those of us who don't want the extra calories that come with stirring in flour and butter, this is an amazing alternative!


Baked Mac and Cheese Recipe


Ingredients 8 ounces elbow macaroni ½ teaspoon salt, divided 1 tablespoon olive oil 2 cups broccoli florets, chopped into small pieces 3 cups low-fat milk, divided ½ cup whole wheat flour, plus more for dusting the baking dish and cutting board 2 large egg whites or 1 large egg 1 teaspoon minced fresh thyme leaves or ½ teaspoon dried thyme leaves Salt and freshly ground black pepper to taste   2 cups grated sharp Italian cheese blends (8 ounces) Directions Step 1 Place the macaroni in. about a six-quart casserole dish and stir in 1 teaspoon of salt. Step 2 Pour the olive oil over the macaroni and broccoli. Step 3 In a small bowl, combine the remaining 2 cups of milk with the whole wheat flour and egg whites or egg. Stir well with a whisk or fork until you have a thick batter. Step 4 Pour this batter over the macaroni and broccoli in the casserole dish. Add more milk if needed to reach your desired consistency, although you don't want any lumps in your cheese sauce. Step 5 Stir up the mixture with a spatula until it is well mixed together. Step 6 Preheat oven to 350 degrees F (175 degrees C). Step 7 Bake the casserole for about 25 minutes, or until the macaroni is tender and beginning to brown around the edges. Step 8 Stir in the minced thyme just before serving. Reduce oven heat to 325 degrees F (160 degrees C) and bake for an additional 15 minutes to brown on top.
