Chicken with Scalloped Potatoes

 A complete meal in no time at all? Bet on chicken cutlet with potato. Ideal if you have some chicken pieces left over after your Sunday meal. Very easy to do, economical and fast, you will not be disappointed and we will ask for more! Add a few slices of button mushrooms for a more autumnal recipe, or black truffle shavings if there is an occasion to celebrate!


Chicken with Scalloped Potatoes


Ingredients: 2 Chicken Breasts ¼ cups margarine, melted ½ tsp. salt 1 cup mayonnaise (can be substituted for alternative condiment) 4 pieces sourdough bread slices, toasted, for serving (optional) 4 bacon strips, cooked and crumbled (optional) Instructions: Combine the chicken breasts, melted margarine, and salt in a medium-sized bowl. Stir well until the mixture is combined well. Divide the chicken mixture into 4 equal portions and spread each portion in a buttered baking dish. Cover the top of each portion with half of the mayonnaise and then sprinkle half of the crumbled bacon. Bake for 30 minutes at 350 degrees Fahrenheit or until cooked through. Serve hot, with a side of vegetables or bread, and garnish with additional bacon pieces if desired.
