Chocolate Chip Cookie Peanut Butter Pie

 This is the best peanut butter cookie pie recipe you will ever taste. The filling is made of ground pecans, brown sugar, and chipotle powder. It is mixed in with warm chocolate chips and vanilla extract. It is only baked for about two minutes. Make sure to follow the recipe accurately, everyone loves this delicious pie.

Chocolate Chip Cookie Peanut Butter Pie


1/2 cup brown sugar

1/2 teaspoon salt

1/2 teaspoon baking powder

2 cups chunky peanut butter (not old-fashioned or natural style)

1 1/4 cups flour, preferably whole wheat pastry flour, divided

1 cup semisweet chocolate chips, divided

6 tablespoons butter, melted and cooled slightly


Preheat oven to 350 degrees F. Lightly coats a 9-inch pie plate with nonstick cooking spray. 

Make the cookie crust: In a medium bowl, stir together the first 4 ingredients; add 1 cup of peanut butter and 1 cup of flour; mix just until combined. 

Fold in 3/4 cup chocolate chips. Press mixture into the bottom and up the sides of the prepared pie plate. Bake 8 to 10 minutes or until lightly browned and set. 

Make the peanut butter filling: In a large bowl, beat the remaining 3/4 cup peanut butter, melted butter, and the remaining 1 cup flour with an electric mixer on medium speed until creamy. 

Beat in sugar. Add egg and vanilla; beat just until combined. Pour filling into crust-lined pie plate; sprinkle with remaining 1/2 cup chocolate chips. 

Bake 25 to 30 minutes or just until set in the center (mixture may appear to be slightly liquid). Cool completely on a wire rack at room temperature before serving.
