How To Make Chicken Gnocchi Soup


Ingredients:

1 tablespoon olive oil

8 cups of chicken stock, low sodium

1/2 teaspoon black pepper

3 carrots, chopped finely

1/2 teaspoon crushed red pepper flakes (optional) 



Directions: 

1. Heat olive oil in a large pot over medium-high heat. Add garlic and onions and cook for 2 minutes until soft. Add the rest of the ingredients (starting with 8 cups of stock), cover, and bring to a boil. Reduce heat and simmer for 20 minutes until carrots are tender. 

2. Blend ingredients until smooth using a stick blender. Alternatively, use a standard blender and work in batches to puree the soup until smooth.
