How To Make Eggplant Bacon

How To Make Eggplant Bacon


Ingredients:
1 medium eggplant
2 Tbsp soy sauce 30 mL, or tamari for GF option
1 Tbsp toasted sesame oil 15 mL
1 Tbsp olive oil 15 mL
1 tsp maple syrup 5 mL
1 tsp lemon juice 5 mL
1 tsp smoked paprika
1/2 tsp each salt, black pepper, and cumin
1/4 tsp vegan Worcestershire sauce


Directions: 
Preheat the oven to 400 degrees Fahrenheit (200 Celsius). Slice the eggplant lengthwise into slices about 1/2 inch thick. Sprinkle with garlic powder, salt, pepper, and paprika (the approximate amounts are in parentheses when they are not listed in any other ingredient quantities). Bake eggplant slices on a baking sheet for 25 to 30 minutes until they are crispy. (Bake time will vary depending on the thickness of the eggplant.)
