Mint Chocolate Brownies

Mint Chocolate Brownies


1 cup cocoa powder 

1 3/4 cups all-purpose flour 

1 3/4 tsp. baking powder 

1/2 tsp. baking soda 

1/2 tsp. salt 

2 sticks unsalted butter, softened 

3 egg yolks 2 cups sugar 1/4 cup milk 

2 Tbsp. of peppermint extract


Preheat oven to 350. Line a baking sheet with parchment paper. Mix together cocoa powder, flour, baking powder, baking soda, and salt. Set aside.

Cream the butter and sugar in a stand mixer on medium speed until light and fluffy (about 3 minutes). Add egg yolks one at a time and beat until combined. Add the milk and peppermint extract to the mixture. Slowly add in the dry ingredients until just combined. Do not over mix!

Scoop out batter into prepared pan using an ice cream scoop or a 1/4 cup measuring cup to evenly distribute it in each spot. You may need to use your hands to make sure there aren't any air pockets left behind when smoothing down the top layer of batter.

Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Let cool completely before cutting into bars. Or go ahead, eat them all before they completely cool off and get hard!
