Mmm… Roast Chicken

 A simple and pleasant way to renew roast chicken (not even afraid!). healthy and easy to prepare, it doesn't contain a lot of ingredients. A great dinner with the family


Mmm… Roast Chicken


Ingredients 2 cups chicken broth 2 cloves garlic, minced 1 bay leaf 3 sprigs of oregano 1 tsp. crushed red pepper flakes (optional) Salt and black pepper to taste 2 lbs. small Yukon gold potatoes in skins cut in half 2 lbs. celery, cut into 3-inch long pieces 16 ounces artichoke hearts, drained and roughly chopped 1 can (15 oz.) chickpeas, drained and rinsed 3 medium carrots peeled and sliced on the bias 4 lemons cut into wedges for serving Directions Add broth through red pepper flakes to a large pot over high heat; add celery and bring to a boil. Reduce heat to a simmer and add artichoke hearts, lemons, carrots, potato wedges, and chickpeas; season with salt and pepper. Cover and cook for 20 minutes or until vegetables are tender. Stir in chicken broth if needed to thin the sauce. Return chicken to the roasting pan, cover, and roast for 30 minutes. Serve with lemon wedges.
