Oreo, Triple Double Neapolitan Cookies

Oreo, Triple Double Neapolitan Cookies


Ingredients:

1 cup all-purpose flour

3/4 cup unsweetened cocoa powder (Dutch, if you have it)

1/2 teaspoon baking soda

1/2 teaspoon salt 

1 stick (8 tablespoons) unsalted butter, at room temperature 

4 ounces brown sugar (packed) 

2 ounces white sugar (packed) 

1 egg 

1 teaspoon vanilla extract 

2 cups mini chocolate chips

3 Oreo Cookies* 9 ounces of good quality chocolate chunks* (i.e. Ghirardelli)

2 tablespoons of unsalted butter



Method:

Preheat the oven to 350 degrees. Line two baking sheets with parchment paper and set them aside. In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt. Set the dry ingredients aside. In a large bowl or stand mixer with the paddle attachment, cream together butter and sugars until they're light in color and fluffy in texture. 

Add egg, vanilla extract, and mix again until incorporated. Slowly add in dry ingredients while mixing on low speed until just combined (don't overmix). Fold in chocolate chips by hand with a spatula or wooden spoon. 

Using a small cookie scoop, portion balls of dough approximately 1 1/2 to 2 teaspoons each and place on prepared baking sheets. Bake for 10 minutes and then turn the oven down to 325 degrees. Bake for an additional 8-10 minutes or until the cookies are set.

For the chocolate chips: Melt chocolate in a microwave-safe bowl (30 seconds at a time) until melted, stirring with a whisk or rubber spatula between each microwave cycle. Take care not to overheat since the chocolate could seize up and seize the coating when cooled. To remove the Oreo cookie dough from their paper liners, put them on top of your tray leaving some space between each one so they can spread out while they cool.
