Pad See Ew with chicken Recipe

 As you probably already know, Pad Thai is a popular Thai dish consisting of stir-fried rice noodles, thin strips of beef or chicken, and tamarind sauce. The common ingredients include dried shrimp and fish sauce. Some versions also contain Chinese broccoli, bean sprouts, and scrambled egg. This dish can be cooked with just a wok, but most cooks use a skillet with tofu instead of the standard stuffings.


Pad See Ew with chicken Recipe


Ingredients

For the sauce:

2 tablespoons oyster sauce (or to taste) (see note)

1 tablespoon soy sauce (or to taste) (see note) 2 teaspoons brown sugar or palm sugar, or to taste 

1 teaspoon sesame oil [optional] 

1/4 teaspoon crushed red pepper flakes, or to taste 

1/2 teaspoon finely chopped garlic 

1 medium-size pinch of salt

For the egg noodles:   

2 packages of rice noodles [that are 4 oz each], cooked according to package directions 

For Pad See Ew: 

3 large eggs, beaten with a fork and seasoned with salt, pepper, and cayenne



Preparations

1.   Heat up your wok until it's smoking hot. Add cooking oil and swirl it around to coat the sides of the wok. Add silken tofu and cornstarch into the wok and stir fry until tofu is golden brown in color. Use a slotted spoon to remove the tofu from the wok and set it aside on a plate.

2.   Add garlic and stir fry for 1 minute in oil. Add soy sauce, dark sweet soy sauce, scallion, and 1/2 teaspoon fish sauce to the wok and stir fry until all of the ingredients are combined and the scallion is fragrant. Stir in cooked noodles, tofu and scallions, mix thoroughly then transfer this mixture to a large bowl.

3.   Heat up your wok again and add cooking oil or vegetable oil then add chicken breast sliced or diced chicken breast (about 2 cups of sliced chicken) in small pieces (the more ingredients you add at one time, the quicker it will brown).
