Schaum Omelette Pancakes

 Making pancakes is an easy recipe that can be whipped up in no time, with ingredients you probably already have in the cupboard. Schaum Omelette Pancakes recipe will give you a fluffy pancake with a crispy exterior and a soft interior. These are great for breakfast or lunch, served in individual portions on your favorite plates, and eaten with your favorite toppings, like syrup or melted butter.

Schaum Omelette Pancakes


1 cup all-purpose flour, sifted before measuring (200 grams)

2 cups water, at room temperature (500 grams)

2 eggs, separated (100 grams)

1 tsp. baking powder (6 grams) or 1 Tbs. cornstarch (4 grams) or 1/4 tsp. baking soda (1 gram) and 1/4 tsp. salt (1 gram)


In a large bowl or in a blender/mixer, mix the flour with the baking powder, soda, and salt. 

In another bowl or in a blender/mixer, beat the egg yolks with sugar until pale and thickened. Whisk the egg whites in a clean bowl until foamy. 

Pour the flour mixture into the egg yolks and gently whisk in 1/2 cup of the water. Combine with the egg whites, stirring gently. Add more water to make a soft but pourable batter.

Pour or ladle into a hot skillet and cook over medium heat until very brown, turning once or twice, about 2 minutes per side. Drain on paper towels before serving.
