If you're looking for a way to make breakfast or brunch extra fancy, souffle pancakes are just the answer. They're light, fluffy, and incredibly easy to make. You don't need special pans or skills that you don't already have - just a little patience and determination to get your heart-desired pancakes every time.
Ingredients
1 cup all-purpose flour, sifted
1 teaspoon baking powder
Pinch of salt or another sea salt, optional
2 tablespoons granulated sugar
Instructions
Preheat your oven to 350 degrees F. In a medium bowl mix together the flour, baking powder, and salt. Set aside.
In another medium bowl, beat together the egg whites with 3/4 cup water until frothy and slightly stiff. Stir in the remaining 1/4 cup of water as needed to reach a smooth consistency.
Set aside. In a large bowl, whisk together the egg yolks, sugar, and vanilla extract until smooth. Add the flour mixture to the egg yolk mixture and mix well.
Now carefully fold the egg white mixture into the batter (see pictures above). Spray a nonstick pan with vegetable oil spray and place over medium heat.
Pour approximately 1/4 cup of batter into each hole in your pan (you don't need to spread it out). When bubbles form on top of the pancakes (after about 2-3 minutes), flip them over, lower the heat, and cook for another minute or so until golden brown. Continue cooking pancakes in this way until all are done.
