Thai Spicy Chicken with Basil


Ingredients 1 tablespoon vegetable oil 1/2 teaspoon salt 1/2 teaspoon pepper 1 1/2 pounds boneless chicken breast, cut into bite-sized pieces, marinated 2 green onions, chopped  3 cloves garlic, minced 3 tablespoons soy sauce 1 teaspoon ground ginger 1 small chili pepper, finely chopped 3 tablespoons unsalted roasted peanuts, sliced Directions Heat the oil in a large skillet over medium heat. Add chicken and salt and pepper; cook until no longer pink, about 5-6 minutes. Stir in green onions and garlic; cook for another minute or two. Reduce heat to low; stir in soy sauce and ginger. Add chili pepper and peanuts; cook for about 1 minute or until warmed through and peanuts are lightly toasted. No Condiments? : You can serve this recipe with some rice, rice noodles or a salad. Add some steamed rice, lo-mein, and stir fry vegetable combo on the side too!
