Tuscan Garlic Chicken

 Garlic chicken is a very easy and quick recipe. A really easy recipe for chicken with a tasty garlic sauce. Serve it over pasta or other dishes... it's simply divine. For a simple, quick, and above all friendly meal, this garlic chicken is perfect. If you prepare this dish in advance, you just have to reheat it in the oven or in the microwave and the next day it's even better.


Tuscan Garlic Chicken


Ingredients 2 lb. all-white chicken breast 3 minced garlic cloves 1 tablespoon dried rosemary (or 2-3 teaspoons fresh) 1 teaspoon salt ¼ cup olive oil ½ cup greek yogurt or sour cream ⅓ cup grated parmesan cheese. Preparations I preheat my oven to 400˚ F. Then I brown my chicken breasts in a pan and remove them from the pan. Add 1 minced garlic, 1 tablespoon dried rosemary, ¼ teaspoon salt, 1 tablespoon olive oil, and mix it in with the chicken breasts. Place in a baking dish and cover the mixture with grated parmesan cheese, so the chicken doesn't stick together. Cook it for about 20-30 minutes or until cooked through and golden brown. When cooked, add the cooked chicken to a large mixing bowl and set aside. In a small bowl, stir together 1 tablespoon olive oil and 3 minced garlic cloves. Then transfer to a food processor or blender and puree until smooth. Scrape the mixture into a medium mixing bowl. Place ¼ cup greek yogurt or sour cream in the food processor or blender, then use it as an additional blending tool to mix the garlic-yogurt mixture with the plain yogurt. Add this mixture back into your large mixing bowl along with cooking spray (as well as 2 tablespoons of fresh chopped parsley). Mix well until everything is evenly combined. Then stir in ⅓ cup grated parmesan cheese and seasoning salt, to taste.
