Chicken Mushroom Rice combo is a wonderful combination of silky smooth rice topped with meaty shrooms and melted butter! Serve alongside some steamed vegetables or as an appetizer with red wine vinegar-based dipping sauce.
Ingredients
1/3 cup black mushrooms, chopped (or broccoli, cauliflower, or even carrots)
(optional) 1 tbsp olive oil
2 chicken breasts, cut into medium-thin pieces
1 each cup basmati rice
1 each cup vegetable broth (or you can use water instead)
1/4 tsp salt
2 tbsp ghee
½ tsp black pepper
2 tbsp low-sodium soy sauce
½ cup chopped fresh cilantro (optional)
1 tbsp fresh ginger (grated or minced)
Preparations
1) Cook up some chicken mushroom rice combo with udon noodles or spaghetti (a box will do). Make sure the rice is browned on the outside and cooked al dente in the center. Keep it separate from the other ingredients until just before eating so that it stays warm.
2) With your appetite re-awakened, you can start cooking up some flavors to spice things up! Your options are endless: onions, peppers, garlic, mushrooms, carrots, tomatoes... are you content with whatever spices you want?
3) Lastly and most importantly: portion the rice into little bowls and garnish with chili flakes and a sprinkle of sesame seeds. Yummmm! That's it! All you have to do is eat it all at once or combine it all for your next meal. The choice is yours. Enjoy!
