Making pancakes is an easy recipe that can be whipped up in no time, with ingredients you probably already have in the cupboard. Ingredients:
1 cup all-purpose flour, sifted before measuring (200 grams)
2 cups water, at room temperature (500 grams)
2 eggs, separated (100 grams)
1 tsp. baking powder (6 grams) or 1 Tbs. cornstarch (4 grams) or 1/4 tsp. baking soda (1 gram) and 1/4 tsp. salt (1 gram)
Method:
In a large bowl or in a blender/mixer, mix the flour with the baking powder, soda, and salt.
In another bowl or in a blender/mixer, beat the egg yolks with sugar until pale and thickened. Whisk the egg whites in a clean bowl until foamy.
Pour the flour mixture into the egg yolks and gently whisk in 1/2 cup of the water. Combine with the egg whites, stirring gently. Add more water to make a soft but pourable batter.
Pour or ladle into a hot skillet and cook over medium heat until very brown, turning once or twice, about 2 minutes per side. Drain on paper towels before serving.
