Chicken Jalfrezi Recipe

This is a popular Indian chicken-based dish. It’s made with tomatoes, ginger and garlic, cayenne pepper powder, red curry paste, and yogurt. The final product is full of delicious flavors. Few dishes are easier to make than this one and it makes for a great weeknight meal! This particular dish is from Bangla Cuisine which is an Indian restaurant in Australia.


Chicken Jalfrezi Recipe


Ingredients

* 2 tsp. cumin seeds (crushed)  (See notes)

* 1/4 tsp. cayenne pepper (or less if desired) 

 • 1 tbsp. vegetable oil 

• 5 chicken breast halves, skinned 

• 1" piece ginger, peeled and crushed (1 oz. = 1/4" x 4") 

• 2" piece garlic, crushed (2 oz. = 1/2" x 2") 

• 1 green chili pepper, seeded and quartered 

• 2" piece shallots, slivered (1 oz. =  1/2" x 2")

• 1 cup plain yogurt 

• 3 tbsp. tomato ketchup or sauce  

• 2 tbsp. lemon juice



Method

1. In a large skillet or wok, heat oil over medium-high heat. Add cumin seeds and cayenne pepper; cook for about 20 seconds until oil begins to smoke slightly and then quickly add chicken pieces. Stir-fry for about 4 minutes until chicken is well browned.

2. Stir in garlic, ginger, and chili pepper and cook for another minute. Add shallots, yogurt, ketchup, and lemon juice then stir well to combine. Reduce heat to low and simmer gently, covered, for 30 minutes or until chicken is cooked through. Stir occasionally during the simmering period so the sauce doesn't burn on the bottom of the pan.

Notes: For a spicier dish, increase the cayenne pepper by 1/2 tsp.
