Pea Soup Recipe


Ingredients:

2 cans turkey or chicken stock

3 pkg. dried split peas (you can also use 2 1/2 lbs. of frozen split peas), soaked overnight, and drained

1 teaspoon salt plus additional to taste

1/2 cup chopped onion

2 cups chicken, beef, or vegetable broth*



Directions: 

In a large saucepan, combine onions, stock, salt, and water to cover the peas by about 2 inches. Over medium heat bring the mixture to a boil. Lower heat and simmer for 40 minutes until the liquid is absorbed and peas are soft with no kinks left in them. [That's my cutting board after I broke it] . Return to a boil and add the peas. Lower heat again and simmer for about 20 minutes longer, or until peas are soft. This should be the only boiling you do! See the photo below for a visual of this process.

Measure and add the stock, onion, salt, and chicken/beef broth to cover the peas by about 2 inches. Over medium heat bring the mixture to a boil. Lower heat and simmer for 40 minutes until liquid is absorbed and peas are soft with no kinks left in them. Return to a boil, add the peas and lower the heat again. Simmer for about 20 minutes longer or until peas are soft.
