Apple Spice Cake

 Growing up, I loved apple spice cake. My mom would make it every year for my birthday and while it was always a big hit with the family, I was always craving something extra special in celebration of my birthdays. One year, my mom decided to bake me a vanilla version (or should I say vanilla-spice) since that is what she liked. I found myself terribly disappointed by the change and after some time, we switched back to making apple spice cake together! This is our favorite recipe for the classic flavor that we love so much. It’s a great starter recipe for kids to help with and I guarantee that you won’t be disappointed by the end result!


Apple Spice Cake


Ingredients:

1 cup all-purpose flour 

1 teaspoon baking soda 

3/4 teaspoon salt 

1 teaspoon ground cinnamon  

1/2 teaspoon ground nutmeg 

3 medium apples (not under-ripe), peeled and grated 

1/2 cup vegetable oil 

2 large eggs 

2 cups sugar 

1 teaspoon vanilla extract Frosting:  

8 tablespoons unsalted butter, softened 

3 cups confectioners sugar, sifted 

2 tablespoons, of honey

1 tablespoon vanilla extract 



Directions: 

Preheat the oven to 350 degrees F. Grease and flour a 9-inch round cake pan.

Extract the juice from the apples and set it aside. Place the apples in a large bowl and mash them.  

In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg. Set aside.  

In another large bowl, whisk oil eggs until well blended. Scrape in the vanilla extract and stir to combine. 

Add sugar gradually while stirring continuously to avoid any lumps from forming (if using an electric mixer, start on low speed and increase to medium). 

Add the flour mixture in three additions while stirring continuously (1/3 at first, then 1/2, then 1/3) until combined. The batter will be very thick. 

Pour the apples and their juice into the batter and stir to combine. Pour batter into the prepared pan and bake at 350 degrees F (175 degrees C) for one hour or until a toothpick inserted in the center comes out clean (If you like your cakes moister, cook an additional 5 minutes). 

Allow cake to cool completely before frosting.

Frosting:

Heat oven to 350 degrees F (175 degrees C). In a large bowl, cream together butter and sugar on medium-high speed until light and fluffy. Beat in honey, then the vanilla extract. Spread frosting evenly over the cake.
