Socca Bread

 Socca is a traditional dish from Nice, France. It's a type of pancake made from chickpea flour that can be eaten for breakfast, lunch, or dinner! This easy socca recipe will take you about 30 minutes to make and is perfect for those days when your stomach's growling and you don't know what to make.

Ingredients:

1-1/2 cups chickpea flour 

3/4 tsp sea salt or to taste

freshly ground pepper to taste, optional 

1/2 cup extra virgin olive oil

1/4 cup water, plus up to 

1 cup more if using homemade chickpea dough. 



Instructions: 

Place all ingredients except olive oil in a large bowl.

Add enough water to the mixture, using as needed from 1/4 cup up to 1 cup. If using homemade chickpea flour and homemade chickpea dough it will need 1/4 cup water and up to 1/2 cup more if using store-bought chickpea flour.

Using a wooden spoon stir the mixture until smooth. This can take longer than you think!

To prepare your pan or griddle, heat vegetable oil in a skillet or griddle over medium heat until hot enough to sizzle when dropping a small amount of batter in the pan or on the griddle.

Pour batter in a thin layer on the bottom of the pan and cook until bubbles form on the surface of the batter. This will only take about 1 minute to cook one side.

Flip using a spatula and cook another minute or until cooked through completely. Socca should be crispy when cooked through. Add more oil as needed while still hot if more is needed add 1 tablespoon at a time as you're cooking from batch to batch.
