Coconut Almond Chocolate Chip Cookies


This is a delicious, decadent, and easy recipe for coconut almond chocolate chip cookies. The dough can be made ahead of time and the finished cookies baked off when ready to enjoy. These cookies will quickly become a favorite in your household!

Coconut Almond Chocolate Chip Cookies


1 cup coconut oil (softened) 

3/4 cup honey 

1/2 cup almond meal 

2 cups rolled or quick oats (not instant) 

1 teaspoon vanilla extract 

1/2 teaspoon baking soda 

1/4 teaspoon sea salt flakes 

1 cup chocolate chips (or carob chips or raisins)


Preheat the oven to 350 degrees F. Line two cookie sheets with parchment paper and set them aside. In a large mixing bowl, cream together the coconut oil and honey. 

Add the almond meal, oats, baking soda, salt, and vanilla. Stir to combine. Fold in the chocolate chips or raisins or carob chips. Scoop rounded tablespoon-sized balls of dough onto cookie sheets 2-3 inches apart (they spread a bit while baking). 

Bake cookies for 10-12 minutes or until golden brown around the edges. Cool on a wire rack. Enjoy!
