The shrimp scampi recipe is one of the most popular dishes in restaurants. It's a delicious and light cream-based sauce based on garlic and butter, with a hint of lemon juice, parsley, and salt. This recipe uses plenty of shrimp to give it body and enhance the flavor while cooking wine is used in place of water or stock.
Ingredients
1 pound of shrimp (shrimp/prawns)
2 Tablespoons olive oil
salt & pepper to taste
3-4 garlic cloves chopped (approximately 2 teaspoons)
1 large lemon juiced and zested (approximately 3 T)

Directions
1) Place shrimp in a pressure cooker with enough salt and pepper to season them.
2) In a small skillet, saute garlic and shallots in oil over low heat for 4 minutes.
3) Add parsley and shrimp to the pressure cooker.
4) Pour in wine. Do not stir at this stage.
5) Seal the pressure cooker lid and bring it up to high pressure while maintaining that pressure for 15 minutes. Let the pressure naturally release for 10 minutes. Once it is done, open the lid and stir through shrimp, shallots, garlic mixture, lemon juice, and parsley. Season with salt and pepper to taste.
6) Serve hot over gluten-free pasta or vegetable of your choice.
