Easy Olive Oil Mashed Potatoes Recipe

These mashed potatoes are super buttery, cheesy and so deliciously rich and creamy. They have a wonderful green hue from the parsley, which also adds a bit of crisp texture to the potatoes as well.

These are very easy to make and they can be made ahead of time (mashed potatoes don’t brown like rice or quinoa do, so they will keep for a few hours without turning brown). Just leave off the parsley until ready to serve.
