Mashed potatoes (Perfect and healthy breakfast recipe)

 Mashed potatoes are one of those foods which can not be cooked with high heat because they tend to go flat as they cook, rather than getting fluffy. So, they're typically mashed while keeping the potato hot in a pot of cold water or other liquid near the stovetop.

1/2 cup butter, softened

3/4 cup milk,  or less  to adjust consistency as needed

1 tablespoon vanilla extract 

2 cups mashed potatoes 

Freshly ground black pepper to taste. 

Salt to taste. 

Chopped chives for garnish if desired.


In a small bowl stir together softened butter, milk, and vanilla. Stir into mashed potatoes and add salt and pepper to taste.

Serve sprinkled with finely chopped chives. Enjoy!

Mashed Potatoes Recipe Tip

Mash your potatoes in a food processor or electric mixer for light fluffy potatoes.

If you do not have horseradish on hand, add about 1/4 tsp of grated fresh ginger to the potatoes for flavor instead.

Garnish: sprinkle finely chopped chives over the top of the mashed potatoes for a pretty presentation. I always keep some cut-up in the freezer for this purpose and also to sprinkle on eggs or fish. Chives freeze beautifully.

Pour some cream over the potatoes instead of milk for a creamier, richer flavor.
