Easy Pea Soup Recipe



Ingredients:


  • 2 cups dried split peas
  • 6 cups water or chicken/vegetable broth
  • 2 tbsp olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 large carrots, diced
  • 2 celery stalks, diced
  • 2 bay leaves
  • 1 tsp dried thyme
  • Salt and black pepper to taste
  • Optional: cooked ham or bacon for added flavor




Instructions:


Rinse the dried split peas and pick out any debris or stones.

Heat the olive oil in a big pot or Dutch oven over medium-high heat. Cook until the onions are softened, about 5 twinkles. Add the garlic, carrots, and celery and continue to sauté for another

Add the split peas, water or broth, bay leaves, thyme, salt, and black pepper to the pot. Stir to combine.

Bring the soup to a boil, then reduce the heat to low and simmer, partially covered, for 1-1 1/2 hours, or until the split peas are tender and the soup has thickened. Stir sometimes to keep the haze from sticking to the bottom of the pot. Remove and discard the bay leaves from the haze
