- 2 hamburger buns, brushed with oil, toasted split in half

- 1 tablespoon tomato ketchup

1. preheat oven to 400°F (200°C).

2. Season both sides of each piece of chicken with salt and pepper, pressing inward on the skin to minimize any contact with bare skin.

3. Place chicken in a glass dishpan.

4. Pour the roux into the bottom of the dishpan.

5. Place in oven for 10 minutes, or until chicken is golden brown and juices run clear when pierced with a fork.

6. Let rest for 2 minutes and then slice each breast vertically into halves, making 4 pieces of chicken from each breast.

7. Place the chicken in the oven for 10 more minutes.

2. Spread some of the roux sauce over each bottom half of the toasted bun, followed by a slice of chicken and then a dollop of ketchup. 3. Place top halves on sandwiches and serve while warm.
