I like Popeye's Fried Chicken and can't get their fill of it. We've got a great recipe for you that will have your mouth watering with anticipation. A classic, Southern fried chicken sandwich with just the right amount of spice and crunch, this recipe will be a staple in your household as well as one of your kids' favorites. This is another great way to satisfy the cravings we all get every now and then.
Ingredients:
- 2 boneless chicken breasts (1/2 pound each)
- 1 tablespoon salt
- 1/8 teaspoon black pepper roux sauce
- 2 hamburger buns, brushed with oil, toasted split in half
- 1 tablespoon tomato ketchup
Instructions:
1. preheat oven to 400°F (200°C).
2. Season both sides of each piece of chicken with salt and pepper, pressing inward on the skin to minimize any contact with bare skin.
3. Place chicken in a glass dishpan.
4. Pour the roux into the bottom of the dishpan.
5. Place in oven for 10 minutes, or until chicken is golden brown and juices run clear when pierced with a fork.
6. Let rest for 2 minutes and then slice each breast vertically into halves, making 4 pieces of chicken from each breast.
7. Place the chicken in the oven for 10 more minutes.
