Red Lentil Soup Recipe

2 tablespoons vegetable oil   

1 onion, finely chopped  

3 cloves garlic, minced 

2 teaspoons ground coriander  

1 tablespoon curry powder 

1 teaspoon dried thyme leaves 

¼ teaspoon ground cumin 

¼ teaspoon salt 

5 cups vegetable stock 

8 ounces red lentils, rinsed and picked over 

10 cups water One 14.5 ounce can diced tomatoes (fire-roasted are preferred) 

½ cup heavy cream 

½ cup chopped parsley


Heat oil in a Dutch oven or large pot over medium heat. 

Add onion and cook until translucent. Add garlic and cook for one minute. Stir in the coriander, curry powder, thyme, cumin, and salt. 

Add stock, lentils, and water. Bring to a boil. Reduce heat and simmer for 25 minutes or until the lentils are tender. 

Stir in tomatoes (with juice) and cream. Remove from heat and stir in parsley. Transfer to a serving bowl and serve with crusty bread or pita chips
