Brownie Salt'n'Pepa

Sometimes you want to indulge but also feel that guilty feeling. However, you can have your cake and eat it too with these brownies! If a normal brownie is too intense in chocolate, this recipe is perfect as it uses the power of the bittersweet, semi-sweet, and white chocolates to let them shine while adding a little peppermint extract to give the brownies that minty flavor.

Brownie Salt'n'Pepa


  • 1 cup all-purpose flour, 
  • 8 tablespoons butter (1 stick)
  • 2 eggs 
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 6 ounces bittersweet chocolate chips (1/4 cup)
  • 3 tablespoons sugar
  • 3 teaspoons baking powder 


Preheat oven to 400 F degrees and line a baking sheet with parchment paper or a Silpat mat. In a bowl, mix the flour and salt together until combined. In a medium bowl, combine the butter and chocolate chips together. Sit in the microwave for 2 minutes (or place in a small saucepan over low heat) just until the butter is melted, and the chocolate is mostly smooth. Add to the flour and stir through. Mix in the eggs with a whisk to incorporate and begin tasting as you go to make sure nothing is too either bland or too sweet. Keep adding vanilla as needed to taste. Scoop out onto a baking sheet and bake for 8-9 minutes.

For the filling:

In a small saucepan, heat the 3 tbsp of sugar and 3 tsp of butter over medium heat until melted. Meanwhile, in a medium bowl, whisk together the egg yolks and salt until combined. Slowly add the hot mixture to the egg yolk mixture while whisking constantly. When all of it has been added, return this to the bowl of an electric mixer fitted with a paddle attachment. Mix on medium for about 10-15 minutes until you have a smooth and thick mixture. Once the brownies have cooled for about 10 minutes, pour the filling over top and spread evenly. Let set for at least an hour in a cool place before serving.

To finish:

Slice each brownie into 4 pieces and serve with your favorite toppings. You may need to take them out of the pan and cut them with a knife to make them easier to slice. This recipe should make around 16-24 slices of brownies (depending on size), but you may want more or less based on how many people you're serving (I think I made 12 as there were 6 of us).

RECIPE NOTES: The butter should be softened by microwaving it for 2 minutes before adding it to the flour.
