  • 1/2 cup orange juice
  • 1/2 cup lime juice
  • 2 tablespoon olive oil
  • 3 cloves garlic, minced.
  • 3 tablespoons fresh cilantro, chopped.


1. Pat dry and season 2 kg pork shoulder with salt and pepper. Vacuum seal the bag and submerge it in a water bath for 3 hours at 106°C to render out excess fat.

2. Vacuum seal the bag and remove it from the water bath and let sit until cool enough to handle.

3. At this stage, your carnitas should be firm, but still moist and juicy inside.

4. Season the meat with another pinch of salt and pepper.

5. Sear your carnitas in a large pan until the exterior is caramelized and the meat is slightly crispy.

6. Remove from heat and let it sit in a warm place for 10 minutes, allowing the center to cook while still keeping the outside moist and tender, again use your vacuum sealer to speed up the process if you have one.

7. Slice thinly against the grain, and serve immediately with warm tortillas or taco shells, guacamole or salsa, rice or beans (Optional).
