Vegan Patties with Potatoes and Salad

Vegan Patties with Potatoes and Salad


Ingredients:


  • 1 pound of potatoes, diced.
  • 1/2 cup diced onion.
  • 1/4 cup diced bell pepper.
  • 1/4 cup diced carrot.
  • 1/4 cup diced celery.
  • 1 clove garlic, minced.
  • 1/2 cup cooked or canned chickpeas, mashed.
  • 1/4 cup breadcrumbs
  • 2 tablespoons chopped fresh parsley.
  • 1 teaspoon smoked paprika.
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • Salad greens, for serving.



Instructions:


Preheat oven to 375 degrees F (190 degrees C).

In a large pot, bring potatoes to a boil and cook for 8-10 minutes, or until tender. Drain and mash potatoes.

On moderate heat, heat the olive oil in a frying pan.

Add the bell pepper, garlic, celery, and carrot. Cook for 5-7 minutes, or until vegetables are softened.

In a large bowl, mix together mashed potatoes, cooked vegetables, chickpeas, breadcrumbs, parsley, smoked paprika, salt, and pepper.

Divide the mixture into 8-10 portions and shape each into a patty.

Place patties on a baking sheet and bake for 20-25 minutes or until golden brown.

Serve patties on a bed of salad greens.
