Just because it’s wintertime doesn’t mean you have to stop eating cookies! Try these oatmeal cranberry white chocolate chip macadamia nut cookies. They are a perfect way to keep your taste buds happy and get your fix of healthy fats and carbs when they need it most. These cookies take minutes to make and can be enjoyed on any day of the week (or all 7 days!). Carbs are found in oats, sweetened by dried fruit, with whole wheat flour for extra fiber, vegan butter or coconut oil for flavor and increased fat intake, and white chocolate chips for a little bit of sweetness. A few sprinkles of salt and pepper finish off the cookies to make them extra delicious! These were one of our favorite cookies last year, we hope you enjoy them too!

Ingredients:


  • 2 1/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 1/2 cups unsalted butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup light brown sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 3 cups rolled oats
  • 1 cup dried cranberries
  • 1 cup white chocolate chips
  • 1 cup chopped macadamia nuts

Instructions:


Preheat your oven to 375°F (190°C) and line a cookie sheet with parchment paper.

In a medium coliseum, whisk together the flour, incinerating soda pop, and swab.

In a large coliseum, cream together the adulation, granulated sugar, and light brown sugar until light and ethereal.

Add the eggs, one at a time, and the vanilla excerpt to the adulation admixture, and beat until well combined. Gradually add the dry ingredients to the adulation amalgamation, mixing until just combined.

Fold in the oats, cranberries, white chocolate chips, and macadamia nuts until evenly distributed.

Scoop 2 tbsp of batter onto the prepared cookie sheet, leaving about 2 inches between each cookie.

Sing for 12- 15 twinkles, or until the edges are smoothly golden brown.

Remove from the roaster and let cool on the cookie distance for 5 twinkles before transferring to a line rack to cool fully.
