  • 12 lasagna noodles
  • 2 cups cooked and shredded chicken
  • 2 cups shredded mozzarella cheese

  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon ground nutmeg

Instructions:


Preheat the oven to 375°F (190°C).

As directed on the package, cook the lasagna noodles. Drain and rinse with cold water.

In a medium mixing bowl, combine the shredded chicken, 1 cup of mozzarella cheese, 1/4 cup of Parmesan cheese, parsley, and garlic. Mix well.

On a flat surface, spread the lasagna noodles out. Spoon the chicken mixture onto each noodle, spreading it evenly over the entire length.

Roll up each noodle, starting from one end and rolling tightly to the other end.

Melt the butter in a medium saucepan over medium heat. After adding the flour, simmer for one minute. Add the milk gradually while continuing to whisk to avoid lumps. Cook until the sauce thickens, about 5 minutes.

Stir in the salt, black pepper, nutmeg, and the remaining 1 cup of mozzarella cheese and 1/4 cup of Parmesan cheese.

In the base of a 9x13-inch baking dish, thinly layer the sauce.

Place the lasagna roll-ups seam-side down in the baking dish.

The roll-ups tops should be covered with the leftover sauce.

Bake for 25 minutes with the foil covering the baking dish.

Once the foil has been removed, bake the dish for a further 10-15 minutes, or until the cheese is melted and bubbling. Before serving, allow the lasagna roll-ups to cool for a while. Enjoy!
